Consider 4 days a week of running. This seems to be the frequency necessary to comfortably achieve the goal of piling up some high mileage during the week. A good schedule is Sunday, Tuesday, Thursday, and Saturday. This allows for training only 2 days during the work week. You can also try Monday and Wednesday or Wednesday and Friday if that works.
